Easy and Healthy for Spring - Greek Yogurt Pancakes with Strawberry Sauce Hanson Watkins BPH

You know that heavy, slow feeling you get after eating a stack of pancakes?  The Greek yogurt in this riff on sour cream pancakes (we substitute the sour cream for Greek yogurt) has 9 grams of protein per serving so it leaves you feeling full satisfied for a long time with no blood sugar drop.  Which is just a side benefit because they taste like the tender, rich sour cream pancakes you can get a OHOP.

With a smooth strawberry sauce on the side and squirt of whipped cream, this lower sugar, this tastes like a rich dessert instead of a healthy breakfast!

 

Greek Yogurt Pancakes

1 cup Greek Yogurt

½ cup All-purpose Flour (gluten free all purpose flour blends work too)

1 Tablespoons Sugar

1 teaspoon Baking Soda

1/2 teaspoon Salt

2 whole Large Eggs

1/2 teaspoon Vanilla Extract

Butter, For Frying And Serving

Smooth Strawberry Sauce

Whipped Cream

In a medium bowl, stir together flour, sugar, baking soda, and salt. Then add remaining ingredients and

mix very well with a whisk.

Heat a griddle over medium-low heat and melt some butter in the pan. Using a medium LOW heat is

very important as these pancakes need a bit longer to get set in the middle than usual. If you have it too

hot they will brown too quickly and be mushy in the middle. Drop batter by 1/4 cup servings onto the

griddle. Cook on the first side until bubbles start to form on the surface and edges are starting to brown

(aprox 3-4 minutes) Flip to the other side and cook for another 2 minutes. Keep pancakes in a warm

(200 degree) oven on a single layer on a sheet pan if you want to keep them warm until they are all

done.


Smooth Strawberry Sauce

1 cup strawberry puree (in the freezer smoothie section usually)

¼ cup sugar

1 tablespoon corn starch

¼ cup cold water

Dissolve cornstarch into the cold water and mix well. Combine sugar and corn starch mixture in a very

small pot. Cook on medium heat until it thickens. Stir well. Take off heat and add strawberry puree. Mix

well.
