6-inch Spice Cake With Cream Cheese Frosting Recipe

Try this tiny batch Spice Cake for a fall dessert for two or fewer. It has a delicious cinnamon icing and toasty spices!  


FOR THE CAKE: – 3/4 cup + 1 tablespoon (97g) all-purpose flour – 1/4 teaspoon baking powder – 1/8 teaspoon baking soda – 1/8 teaspoon salt – 1/2 teaspoon ground cinnamon – 1/4 teaspoon ground ginger – 1/8 teaspoon ground nutmeg – 1/8 teaspoon ground cardamom – 1/8 teaspoon ground allspice – 1/4 cup (56g) unsalted butter, softened – 1/4 cup (50g) granulated sugar – 1/4 cup (50g) firmly packed light brown sugar – 1 large egg – 1/4 teaspoon vanilla extract – 2 tablespoons milk – 2 tablespoons sour cream FOR THE FROSTING: – 2 ounces (56g) cream cheese, softened – 2 tablespoons (28g) unsalted butter, softened – 1 cup (110g) confectioners' sugar, sifted – 1/4 teaspoon ground cinnamon – 1/4 teaspoon vanilla extract – chopped nuts, for an optional garnish

MAKE THE CAKE: Heat the oven to 350°F. Grease and flour a 6-inch round pan. You can grease and parchment the pan.  

Step 1 


Mix flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeng, cardamom, and allspice. Set aside.  

Step 2

Beat butter, sugar, and brown sugar until frothy with a medium-speed electric mixer. Mix egg, then vanilla.  

Step 3

Lower the mixer speed. Add flour mixture in three pieces, alternating with milk and sour cream. Just blend.  

Step 4

Spread batter in prepared pan. Tap the pan on the countertop several times to remove air pockets.   

Step 5

Bake 30–35 minutes until the cake is golden brown and a pick inserted into the center comes out clean.  

Step 6

Cool the pan on a wire rack for 15 minutes. Then remove the cake from the pan and cool on a rack.  

Step 7

FOR FROSTING: Beat cream cheese and butter on medium speed with an electric mixer until frothy.  

Step 8

Mix in confectioners' sugar. Stir in cinnamon and vanilla. Frost the cooled cake with icing. Add chopped nuts if desired.
