Ingredient
– 1 & 1/2 cups all-purpose flour– 1 cup granulated sugar– 1 teaspoon baking powder– 1/2 teaspoon baking soda– 4 large egg white– 1 & 1/2 teaspoons vanilla extract– 1 cup milk– 1/4 cup vegetable oil– 1/3 cup rainbow sprinklesFor the frosting– 1 cup unsalted butter softened– 4 cups powdered sugar– 2 tablespoons milk– 1 & 1/2 teaspoons vanilla extract– 1/4 teaspoon fine salt– ¼ cup
Introduction
Heat the oven to 350°F. Reserve cupcake pan liners. Add flour, sugar, baking powder, and baking soda to a stand mixer with the paddle attachment and mix on low speed.
Step 1
Add egg whites and vanilla, stir until smooth, and scrape sides with a rubber spatula. Scrape the sides as you mix the milk and oil. Mix in colorful sprinkles.
Step 2
Fill cupcake liners ⅔ full with 3 tablespoons of batter, avoiding overfilling. Bake until a toothpick inserted into the center comes out clean, 16-18 minutes.
Step 3
Wait 10 minutes to cool in pan. Transfer the cupcakes to a wire rack to cool completely.
Step 4
After the cupcakes cool, cream butter in a stand mixer with the paddle attachment until smooth to make the frosting.
Step 5
Gradually add powdered sugar until fully mixed. Stir in milk, vanilla, and salt. Scrape sides. On medium-high speed, whip for 3 minutes until light and fluffy.
Step 6
Add colorful rainbow sprinkles. Frost confetti cupcakes. I prefer piping bags with Wilton 2A round tips. Serve with more sprinkles if desired.
