Ingredient
For the crust– 2 & 1/2 cups all-purpose flour– 2 tablespoons granulated sugar– 1 cup cold salted butter cut into small cube– 1 teaspoon vanilla extract– 1/2 cup cold waterFor the filling– 1/2 cup light brown sugar packed– 1 tablespoon salted butter melted– 1 tablespoon all-purpose flour– 2 teaspoons ground cinnamonFor the glaze– 1 cup powdered sugar– 1/2 teaspoon ground cinnamon– 1 - 2 tablespoons milk– 1/2 teaspoon
Introduction
Process flour and sugar. Occasionally pulse to mix. The cold cubed butter should be broken up and no larger than a pea when added and pulsed. Add vanilla.
Step 1
While the food processor runs, slowly add water. Make sure the crust comes together without overmixing. Shape the crust into a ball and wrap it with plastic.
Step 2
Chill in the fridge for 20–30 minutes. Heat the oven to 400°F. Lay parchment paper on a big sheet tray and set aside. Mix brown sugar, butter, flour, and cinnamon to make the filling.
Step 3
Set aside. Roll the dough into a 1/4-inch rough rectangle on a lightly floured, clean surface. Cut rectangles from dough using a 3×4 inch cookie cutter or equivalent size.
Step 4
Roll out the scraps of dough again to cut more rectangles. We need 12 parts. Six crusts should be placed on the sheet tray without touching.
Step 5
Fill each crust with about 2 teaspoons of filling, leaving a ¼ inch border around the edges. Cover with another crust and press edges gently. Press edges with a fork to seal.
Step 6
Use the same fork to make 6 rows of ventilation holes in the tarts' centers. Bake 15-18 minutes till golden. Let cool fully. For the glaze, mix powdered sugar, cinnamon, milk, and vanilla.
Step 7
A thick, pourable glaze is best. Add 1 tablespoon milk to desired consistency. A wire rack above a sheet tray collects tart drips. Glaze tarts. Glaze for 20 minutes.
