Mix the butter, brown sugar, granulated sugar, and peanut butter in a stand mixer bowl or a big bowl until the mixture is light and fluffy. One to two minutes.

Put the egg and vanilla extract in the bowl. Mix them together. Mix the flour, baking soda, and salt together in a different, smaller bowl. Use a whisk to mix the ingredients and break up any clumps.

Mix half of this into the butter and sugar mixture and blend on low speed just until it's all mixed in. Add the other half and blend just until everything is well combined.

Put 1/4 cup granulated sugar in a bowl. Roll a tablespoon of dough into a ball. Place cookie dough ball on prepared cookie sheet after rolling in sugar.

All thirty of them will be able to fit on a single cookie sheet if you prepare them in advance. A total of six rows are present, and each row has five biscuits.

Take seven minutes to bake. They will appear to be the same (they will be slightly lighter in colour and have a "puffy" appearance), but believe me when I say that you should remove them from the oven.

Right away, carefully press a Cadbury Mini Egg into each cookie. You want the edges to break, so they will! For about 15 minutes, leave the cookie on the baking sheet. Warm one up and eat it!

It's also fine at room temperature. Cover leftovers and leave them out at room temperature. I put mine in a Ziploc bag that's a gallon size.
