Tart cherries enhance these simple cherry chocolate chip cookies! Crispy rims and chewy middles make them excellent.
INGREDIENTS
– 3 cups (360g) all-purpose flour– 1 teaspoon baking powder– 1/2 teaspoon baking soda– 1/2 teaspoon salt– 3/4 cup (170g) unsalted butter, softened– 1 cup (200g) granulated sugar– 1/4 cup (50g) firmly packed light brown sugar– 2 large egg– 1 teaspoon vanilla extract– 1 & 1/2 cups (255g) semisweet chocolate chip– 1 cup (36g) freeze-dried cherries (sweet or tart, whichever you prefer)*
Preheat oven to 350°F. Cover baking sheets with parchment or silicone. Mix flour, baking powder, soda, and salt. Set aside.

Beat butter, sugar, and brown sugar until frothy with a medium-speed electric mixer. After adding each egg, stir well. Mix in vanilla.
Step 2
Lower mixer speed. Add the flour mixture slowly, mixing just until incorporated or a few flour streaks remain. Mix chocolate chips and cherries gently.
Step 3
Roll balls from 3-tablespoon dough. Place cookies on prepared pans, allowing 2 inches between.
Step 4
Bake each pan for 15-18 minutes until the rims are lightly browned and the centres are soft. Flatten the warm biscuits' tops using a cookie spatula or flat-bottomed glass.
Step 5
While warm, flatten cookie tops using a cookie spatula or flat-bottomed glass. Let cookies cool on the pan for 5 minutes. Transfer the cookies to a wire rack to finish cooling.
