– 8 slices bacon– 4 boneless skinless chicken breasts– 1/2 teaspoon salt– 1/4 teaspoon black pepper– 1 teaspoon red pepper flake– 3 small ripe avocado– 4 garlic cloves minced– ½ red onion small diced– 8 slices pepper jack cheese– 2 sheets puff pastry thawed– 1 large egg– 1 tablespoon water– 1 tablespoon Everything bagel seasoning
Introduction
Heat the oven to 375°F. Crisp bacon, drain, and coarsely crumble; leave aside. Pound chicken pieces to ¼” thickness and season both sides with salt, pepper, and red pepper flakes.
Step 1
Mix crumbled bacon, minced garlic, and onion with mashed avocados in a basin. Place 2 cheese slices on the chicken's pointy end.
Step 2
Spread avocado mixture on cheese. Start with the narrow end and roll the chicken tightly. Place chicken log on plastic wrap and twist ends oppositely.
Step 3
This tightens the chicken wrap; repeat with remaining ingredients. Refrigerate 10 minutes. Place puff pastry sheets flat on a firm surface.
Step 4
Unwrap and set the chicken in the center of the puff pastry, then fold it over like a gift. Pinch seams properly to seal. Cut away any excess pastry edges. Some overlap is alright,

Overdoing it deforms them and slows cooking. Make egg wash by whisking egg and water. Sealing, seasoning, and goldening the pastry crust.
Step 6
Pastry with egg wash and everything bagel seasoning. Add chicken packets to a wire-rack baking sheet.
Step 7
Keeping the pastry bottom from getting mushy and minimizing the mess if chicken stuffing spills after baking. Bake till 165°F and golden brown, 45 minutes. Serve after cooling slowly.
