Chocolate Chip Cookie Cake Recipe

This cookie dessert is wonderful for any occasion! Who doesn't want a huge chocolate chip cookie? Rich, buttery, chocolate chip cookie cakes with creamy chocolate chips are really good. The fudgy chocolate icing and rainbow sprinkles top it off!  

Cookie Cake – 3/4 cup (180g) unsalted butter, room temp (regular or plant-based) – 1 cup (210g) dark brown sugar, packed – 1/4 cup (50g) granulated sugar – 1 large egg + 1 egg yolk – 2 tsp vanilla extract – 2 cups (265g) all purpose flour – 1 tsp kosher salt – 1/2 tsp baking powder – 1 1/4 cup (225g) semisweet chocolate chips, plus an extra handful for topping Chocolate Frosting – 6 tbsp unsalted butter, room temp (regular or plant-based) – 1 cup (120g) powdered sugar – 3 tbsp unsweetened cocoa powder (regular or dutch process) – 1–2 tbsp milk (regular or plant-based) – Rainbow sprinkles for decorating

Cookie Cake   Heat the oven to 350F and grease a 9" springform pan. Line the bottom with parchment and lay aside.Mix flour, salt, and baking powder in a medium bowl. Set aside.

Blend butter and sugar in a large bowl until smooth and lightened. Make this using a wooden spoon or an electric mixer. Add the eggs and vanilla essence.

Add the dry ingredients and stir gently. To properly combine the dough, add the chocolate chips just before it absorbs all the flour.

Add a handful of chocolate chips to the springform pan dough. Gently press chips into dough. Baking the cookie for 22–25 minutes makes it fluffy and golden.

The cookie should cool at room temperature for 30 minutes before chilling for an hour.

Chocolate Frosting After the cookie cools, make icing. In a bowl, slowly add the cup of powdered sugar to the butter.

This can be done manually or with an electric mixer. After smoothing, add chocolate powder and 1 tablespoon milk.

Mix and decide if another spoonful of milk is needed. Fill a large french star piping bag with icing. Sprinkle sprinkles around the cookie's icing border. Slicing and enjoying!
