Chocolate Chip Cookie Sandwiches Recipe

Fill two golden chocolate chip cookies with luscious buttercream for these homemade chocolate chip cookie sandwiches. The perfect mix of soft cookies and creamy filling!  

INGREDIENTS

FOR THE COOKIES: – 2 & 1/4 cups (270g) all-purpose flour
 – 1 & 1/2 teaspoons cornstarch – 1 teaspoon baking soda – 1/2 teaspoon salt – 3/4 cup (170g) unsalted butter, softened – 3/4 cup (150g) firmly packed light brown sugar – 1/2 cup (100g) granulated sugar – 2 large eggs, room temperature – 2 teaspoons pure vanilla extract – 1 & 1/4 cups mini semi-sweet chocolate chip FOR THE FILLING: – 1 cup (226g) unsalted butter, softened – 1 cup (190g) shortening – 2 pounds (907g) confectioners’ sugar – 2 teaspoons vanilla extract – 1 & 1/2 tablespoons hot water – sprinkles, optional

Making cookies: Mix flour, cornstarch, baking soda, and salt in a medium bowl. Set aside.

INSTRUCTIONS

Beat butter, brown sugar, and granulated sugar until frothy with a medium-speed electric mixer. Mix in eggs and vanilla.  

Step 2

Slowly add the flour mixture and stir until combined. Mix in chocolate chips. Cover and chill cookie dough for 1 hour.  

Step 3

Preheat oven to 350°F. Cover baking sheets with parchment or silicone. Roll heaping spoonful of dough into balls. On the prepared pan, place cookies 2 inches apart.  

Step 4

Bake each pan for 9-11 minutes until the edges golden. Avoid overbaking for soft, chewy cookies.  

Step 5

Let pans cool on wire racks for 5 minutes. Transfer the cookies from the pans to a wire rack to finish cooling.  

Step 6

MAKE FILLING: Beat butter and shortening on medium speed using a whisk attachment in an electric mixer.  

Step 7

Add confectioners' sugar slowly on low speed until mixed. After adding vanilla and water, mix on medium-high for 10 minutes. Light and fluffy filling.  

Step 8

Spread or pipe filling on half the cookie bottoms. Top with other half of cookies to make sandwiches.
