Chocolate Mousse Cake Recipe

Chocolate mousse cake is decadence! A rich chocolate ganache covers a luscious chocolate cake topped with homemade light and fluffy chocolate mousse. This dessert is ideal for any occasion and will impress!  

Chocolate Cake – 3/4 cup (95g) all-purpose flour (or gf baking flour) – 2 tbsp cornstarch – 1/4 cup (25g) dutch process cocoa powder – 1 tsp baking soda – 1/2 tsp baking powder – 1/4 tsp kosher salt – 1/2 cup (100g) fine granulated sugar – 1/2 cup (105g) dark brown sugar, packed – 1/2 cup (112g) vegetable or olive oil – 2 large egg – 1 tsp vanilla extract – 1/2 cup (120g) sour cream – 1/2 cup (120g) hot coffee Chocolate Cake Soak – 1/2 cup (120g) hot coffee – 1 tbsp dutch process cocoa powder

Chocolate Cake Start by preheating the oven to 350F and greasing a 9" springform pan. Remove the ring, place parchment paper on the bottom plate, and close it.

Side paper will protrude. Mix flour, cornstarch, cocoa powder, baking soda, baking powder, and salt in a medium basin. Set aside.

Mix sugar, dark brown sugar, and oil in a large bowl. It should resemble wet sand. Next, mix in eggs, vanilla, and sour cream. Add the dry ingredients and mix halfway. Stir in hot coffee until smooth. Thin batter.

Bake the batter in the prepared pan for 25–30 minutes or until a toothpick inserted in the center comes out clean with a few wet crumbs.

Let the cake cool fully at room temperature or in the fridge. Remove and wipe the ring from the pan after cooling.

Use a cake leveler or broad knife to level the cake top. Return the clean ring to the pan with the cake.

Chocolate Cake Soak Mix hot coffee with cocoa powder. Apply the mixture on the cake, soaking it well. Leave the cake for now while we create mousse.

Step 7

Pour the glossy ganache in the center of the cake and distribute it to the sides with a spoon or small overset spatula to drop. Let the cake chill for 30 minutes to solidify the ganache. Then slice and enjoy!
