The dark chocolate taste in these thin, crispy chocolate wafer cookies is so great!
INGREDIENTS
– 1 & 1/2 cups (180g) all-purpose flour– 1/2 cup (42g) Dutch process cocoa powder– 1/2 teaspoon baking powder– 1/2 teaspoon salt– 1/2 cup (113g) unsalted butter, softened– 1 cup (200g) granulated sugar– 1 large egg– 1 teaspoon vanilla extract
The cocoa powder, baking powder, salt, and flour should all be mixed together with a whisk. Put away.
Step 1
INSTRUCTIONS
Put the electric mixer on medium speed and beat the butter and sugar together until they are fluffy and light. Mix well after adding the egg and vanilla.
Step 2
Turn down the mixer's speed. Slowly add the flour mixture and mix just until everything is mixed.
Step 3
Put the dough in the fridge for 30 minutes with the lid on. Warm the oven up to 350°F. Put parchment paper or plastic liners on baking sheets to line them.
Step 4
Place the dough on a gently cocoa-dusted board. Roll the dough out until it's about 1/8 inch thick. Then, cut it into rounds with a 2 1/2-inch round cookie tool.
Step 5
Roll the dough to 1/8-inch thickness and cut rounds using a 2 1/2-inch cookie cutter.
Place the cut cookies in the pans that have been prepared.
Step 6
Bake the cookies for 15 to 18 minutes, or until they just look set. Do this with one pan at a time. Set the pans on wire racks and let the cookies cool all the way down.
