Cream Cheese Carrot Coffee Cake Recipe

This is elevated carrot cake! Carrot cake with sweet cream cheese and brown sugar walnut crumble is moist. It makes the best carrot coffee cake with everything you want in one bite!  

Brown Sugar Walnut Crumble – 1/2 cup (65g) all purpose flour – 1/2 cup (105g) light brown sugar, tightly packed – 1 tsp ground cinnamon – 1/4 cup (30g) finely chopped walnut – 3 tbsp unsalted butter, melted Carrot Coffee Cake – 1 1/2 cups (230g) finely grated carrot, tightly packed – 1 1/2 cups (195g) all purpose flour – 3/4 tsp baking soda – 1/4 tsp salt – 1 tsp ground cinnamon – 1/4 tsp ground ginger – 1/4 tsp ground nutmeg – 1/3 cup (72g) vegetable oil* – 1/2 cup (100g) granulated sugar – 1/2 cup (105g) light brown sugar, tightly packed – 1/4 cup (62g) sour cream, room temp – 1 large egg, room temp – 2 tsp vanilla extract Cream Cheese – 8 oz full fat cream cheese, room temp – 1/4 cup (50g) granulated sugar – 1/8 tsp orange zest (optional) – 1 tbsp all purpose flour – 1 large egg, room temp

Crumbled Brown Sugar Walnut Combine all ingredients in a small bowl and stir. It should crumble. Place in fridge to cool while we finish the recipe.

Coffee Cake Carrots Set the oven to 350F and prepare an 8x8 square baking dish with parchment paper. Mix flour, baking soda, salt, cinnamon, and nutmeg in a medium basin. Set aside.

Grate the carrots with a box grater's small holes and pack them into a measuring glass. Mix oil, sugars, sour cream, egg, vanilla, and carrots in a large basin with a rubber spatula.

Cheese Cream Add cream cheese, sugar, and zest to the carrot cake dry ingredients in the same bowl. Mash and combine with a fork. After smoothing, add all-purpose flour and egg.

Mix until silky. Remove any microscopic lumps by aggressively whisking. In the baking pan, spread carrot cake batter to combine.

Step 5

Cover the cake batter with cream cheese, being careful not to disturb the even layer. Spread cream cheese evenly after it's properly dispersed. Add crumble, covering the entire surface.

Bake 50-60 minutes. Shake the pan to check doneness. Add 5-10 minutes if the cake wobbles in the center. A solid central jiggle indicates completion.

Step 7

Lift the cake from the pan after 30 minutes’ cooling. Icing is optional, but mix the two components until craft glue-like.

If too thin, add sugar. If too thick, add milk. Drizzle over warm cake, slice, and enjoy!
