Oh my goodness, these Brownie Cupcakes are like brownies, muffins, and cupcakes all in one!
INGREDIENTS
– 12 ounces (340g, about 2 cups) semisweet chocolate– 1/2 cup + 2 tablespoons (141g) unsalted butter– 4 large eggs, lightly beaten– 3/4 cup (150g) granulated sugar– 1 teaspoon vanilla extract– 1 cup (120g) all-purpose flour– 1/2 teaspoon salt– 1 cup chopped nuts, such as pecans or hazelnut– about 1 cup white chocolate, milk chocolate, or other flavored chips, optional
INSTRUCTIONS
Step 1
Place butter and semisweet chocolate in a microwave-safe bowl. Heat at half power for 30 seconds until butter and chocolate melt when swirled. Stir smooth. Allow to cool.
Step 2
Preheat oven to 350°F. Grease or paper-line 12 regular muffin cups.
Step 3
Mix eggs, sugar, and vanilla with cooled chocolate. Stir with a spoon or electric mixer until blended. Mix in flour and salt until mixed. Mix in nuts.
Step 4
Half-fill each muffin cup. Sprinkle a tablespoon of flavored chips over the batter. Fill each cup almost full with remaining batter.
Step 5
Bake 30–35 minutes until a pick inserted into the center comes out with moist crumbs. Pan-cool on a wire rack.
