New Orleans' King Cake Recipe is easy to make at home. You can serve it for breakfast, snacks, or dessert around and before Mardi Gras!  


For the dough – 1/2 cup + 1/3 cup whole milk – 2 tablespoons unsalted butter thinly sliced – 2 & 1/4 teaspoons active dry yeast – 1 large egg – 2 & 3/4 cups all-purpose flour plus more for dusting – 1/4 cup granulated sugar – 3/4 teaspoon fine sea salt – 1/2 teaspoon ground cinnamon – 1/4 teaspoon ground nutmeg For the filling – 1 cup light brown sugar packed – 2 tablespoons all-purpose flour – 1 tablespoon ground cinnamon – 1/4 teaspoon fine sea salt – 1/4 teaspoon ground nutmeg – 1/4 cup unsalted butter melted – plastic baby if using For the glaze – 1 & 1/2 cup powdered sugar – 2-3 tablespoons milk – 1/2 teaspoon vanilla extract For decoration – Dark green sanding sugar – Dark purple sanding sugar – Gold sanding sugar


Microwave milk 15 seconds at 105-110°F. Mix sliced butter and ½ cup milk in a stand mixer. Save. Add yeast to the remaining ⅓ cup milk in a small bowl. Foam takes 5-10 minutes.

If not frothy after 10 minutes, restart yeast. Mix egg and yeast in stand mixer. Turn hook. Add flour, sugar, salt, cinnamon, and nutmeg to the basin. Stir-doughing.  

Step 2

Knead slowly 2–10 minutes. Most of the dough should clear and stick to the basin after many minutes. Smooth, sticky dough for 10 minutes.

Cooking Spray large bowl and stir kneaded dough. Pour more fry spray. 1–1.5 hours in warm plastic wrap doubles it. For the filling, mix brown sugar, flour, cinnamon, salt,

and nutmeg when the dough is almost done. Buttermelt. Remove dough bubbles. Roll dough into a rough 24x10-inch rectangle on a clean, lightly floured surface.

Cover dough with filling, leaving ½-inch border. Add the plastic baby randomly. Compress dough log seams with long side facing you. Line a big sheet tray with parchment. 

Step 6

End the sheet tray dough circle with a pinch. Plastic-raise 1–1.5 hours to double. Start 350°F oven. Unwrap the cake and slice the dough ⅓ through 8 parts evenly to expose layers.  

Step 7

Do not cut dough. Avoid overbrowning by foiling after 15 minutes. Hold the tray for 10 minutes. Great wirerack. After cake cools, mix powdered sugar, 2 tablespoons milk,

vanilla-icing. Glazing solidifies. Overweight? Coat a cake evenly on a wire rack over a sheet tray or parchment paper to catch drips after cooling. Instant sugaring colors. Serve sliced 30 minutes later.
