Delicious Lofthouse Cookies Recipe

These handcrafted Lofthouse cookies have soft, fluffy texture and rich frosting. An easy recipe for delicious cookies that will satisfy!  

INGREDIENTS

FOR THE COOKIES: – 2 & 1/4 cups (270g) all-purpose flour – 1 tablespoon cornstarch – 1/2 teaspoon baking powder – 1/4 teaspoon baking soda – 1/2 teaspoon salt – 1 cup (110g) confectioners’ sugar – 1/2 cup (113g) unsalted butter, softened – 1 large egg, room temperature – 1/4 cup full fat sour cream, room temperature – 1 & 1/2 teaspoons vanilla extract FOR THE FROSTING: – 1 cup (226g) unsalted butter, softened – 1 tablespoon vanilla extract – 1/4 teaspoon salt – 3 tablespoons heavy cream, warm but not hot – 4 cups (440g) confectioners’ sugar, sifted – gel food coloring (optional)

Making cookies: Sift flour, cornstarch, baking powder, soda, and salt. Set aside.

Step 1 

INSTRUCTIONS

Beat confectioners' sugar and butter until light and crumbly using a medium-speed hand mixer. Fully combine the egg, sour cream, and vanilla.  

Step 2

Mix the flour mixture into the butter mixture on low speed until barely incorporated.   

Step 3

Stir the dough several times with a spatula to complete. Cover and chill for an hour. Heat the oven to 350°F. Cover baking sheets with parchment or silicone.  

Step 4

Flour a clean surface and roll the cold dough to 1/4-inch thickness. Cut 20 cookies with a 3-inch round cutter. Continue rerolling until all dough is cut. On prepared pans, place cookies.  

Step 5

Bake one pan at a time for 10–12 minutes. Cookie color will be light. Cool the pans on a wire rack for 5 minutes. Then remove the cookies from the pan to cool on a rack.  

Step 6

FOR FROSTING: Beat butter on medium speed for 3–5 minutes in a stand mixer bowl with the paddle attachment. Light-colored butter.   

Step 7

Add vanilla, salt, and half the cream. Add the confectioners' sugar and food coloring (if using) gradually, then the remaining cream.   

Step 8

Beat the icing for 5 more minutes. For optimal consistency, press the frosting along the bowl sides with a spatula to expel air bubbles.  

Step 9

Leave a small edge of the cooled cookies exposed when spreading or piping icing. Add sprinkles.
