Delicious Migas Breakfast Recipe

We pack our Migas Breakfast with goodies. This breakfast is great for the day—heavy and full.  

Ingredient

For the tortilla – 1/4 cup vegetable oil – 6 white corn tortillas cut into bite-sized piece – kosher salt to taste For assembly – 1 small red bell pepper small-diced – 1 small green bell pepper small-diced – 1 small sweet onion small-diced – 6 large eggs – 1 tablespoon milk or heavy cream – 3/4 teaspoon kosher salt – 1/2 teaspoon black pepper – 10 ounce can diced tomatoes with green chiles drained – 1 cup shredded Monterey Jack cheese divided – 1 cup sharp cheddar cheese divided – 1/4 cup fresh chopped cilantro plus more for garnish – favorite taco toppings

Introduction 

Heat up a big pan over medium-low. Put the oil in. Add a few tortillas at a time and fry until they are golden brown and crisp.  

Step 1

Afterwards, put them on a paper towel-lined baking sheet and sprinkle them with salt right away. Do it again with the rest of the tortillas. Over medium-low heat,  

Step 2

add the onion, red bell pepper, and green bell pepper to the pan. Cook, stirring every now and then, for 12 to 15 minutes, or until softened and lightly browned.  

Step 3

Whisk the eggs, milk, salt, and pepper together in a medium-sized bowl until they are smooth. Set the bowl away. Put the diced tomatoes and green chiles in the pan with the onions and peppers.  

Step 4

Mix them together. Put the eggs in the pan and wait one minute for them to cook. Stir slowly for two to three minutes, or until it starts to set up.  

Step 5

Put in half of the Monterey Jack cheese, half of the cheddar cheese, and the parsley. Mix everything together. Add the fried tacos and mix them in well.  

Step 6

Turn off the heat. Cover it with a lid and sprinkle the rest of the cheese on top. Leave it alone until the cheese melts. Add your favorite taco toppings right away and serve.
