Delicious Mushroom Chicken Recipe

Ingredient

For the chicken: – 1 pound boneless skinless chicken breast cut into 1/4 inch slice – 1 tablespoon soy sauce – 1/2 teaspoon garlic powder – 1/2 teaspoon onion powder – 2 tablespoons cornstarch For the sauce: – 1/4 cup unsalted chicken stock – 3 tablespoons light brown sugar packed – 3 tablespoons soy sauce – 1 tablespoon oyster sauce – 1 tablespoon rice wine vinegar – 2 teaspoons cornstarch For assembly: – 3 tablespoons vegetable oil – 8 ounces white mushrooms thinly sliced – 2 cups zucchini 1/4 inch thick sliced half moon – 1 tablespoon minced fresh ginger – 2 cloves garlic minced – sesame seeds for garnish optional – thinly sliced scallions for garnish optional

Introduction 

Slice chicken and place in a medium bowl. Toss with soy sauce, garlic, and onion powder. Stir the cornstarch into the bowl to coat the chicken and leave aside. 

Step 1

Mix chicken stock, brown sugar, soy sauce, oyster sauce, rice vinegar, and corn starch in a small bowl and set aside. 

Step 2

Over medium-high heat, add 1 tablespoon of oil to a wok or big skillet. Flatten the chicken into a single layer in the hot pan. A golden brown bottom sear takes 30 seconds to a minute. 

Step 3

Toss and fry the chicken for 5-6 minutes until done. Place cooked chicken on a plate. Add another tablespoon of oil and stir-sear the mushrooms for 2 minutes to soften.  

Step 4

Add them on the chicken platter. Keep swirling while you sear the zucchini in the remaining oil for 2-3 minutes until tender-crisp. 

Step 5

Put zucchini on the platter with chicken and mushrooms. Cook ginger and garlic in the skillet for 30 seconds until fragrant. Stir in the sauce, and when it bubbles, 

Step 6

return all the ingredients to the pan and coat them. Simmer for 1-2 minutes to thicken and warm. If using, decorate with sesame seeds and scallions immediately.
