Delicious Pinwheel Cookies Recipe

Enjoy these classic chocolate and vanilla Pinwheel Cookies' elegance and simplicity. These cookies are fun to create and enjoy!  


– 1 cup (226g) unsalted butter, softened to room temperature – 2 cups (400g) granulated sugar – 2 large egg – 2 teaspoons pure vanilla extract – 3 & 1/2 cups (420g) all-purpose flour – 2 teaspoons baking powder – 1/2 teaspoon salt – 1 & 1/2 tablespoons whole milk, divided – 1/4 cup (21g) unsweetened cocoa powder – 1/2 teaspoon espresso powder (optional) – melted dark chocolate for dipping (optional) – sprinkles (optional)

Beat butter and sugar until light and frothy with an electric stand mixer with a paddle attachment or heavy-duty hand mixer on medium speed.  

Step 1 


With a stand mixer paddle attachment, this takes 3 minutes. Keep mixing after adding eggs and vanilla.  

Step 2

Add flour, baking powder, and salt and stir well. The crumbly dough will hold together when squeezed.  

Step 3

Make two equal chunks of dough and return one half to the mixing bowl. Mix 1/2 tablespoon of milk in the mixing bow until mixed. Shape the dough into a broad rectangle on the counter. Wrap securely with plastic.  

Step 4

Add the remaining 1 tablespoon milk, cocoa powder, and espresso powder to the mixing bowl with the second half of the dough.   

Step 5

Combine. Shape chocolate clay like vanilla. Wrap securely with plastic. Refrigerate both doughs 30 minutes.  

Step 6

After chilling, lay each dough rectangle on a 9x13-inch parchment paper. Roll each dough into a 1/4-inch rectangle using a lightly floured pin.   

Step 7

Try to keep the two doughs similar in size and shape using the parchment sheets. Lay one dough on top of the other, aligning up the edges. Remove air bubbles.  

Step 8

Start carefully rolling the layered doughs into logs on the long side. After rolling, your cookie log should be 3 inches wide. Relax for 30 minutes.  

Step 9

Heat the oven to 350°F. Cover baking sheets with parchment or silicone. Slice the cold cookie dough log into rounds with a sharp knife.   

Step 10

Slice cookies and place them on the baking sheet, leaving 2 inches between them. Bake each pan for 15 minutes until the sides get golden brown.   

Step 11

Repeat with remaining cookies. Dip and decorate cookies after they cool to room temperature.
