Double Chocolate Zucchini Brownies Recipe

These Double Chocolate Zucchini Brownies are so soft, moist, and fudgy because they have zucchini in them.

INGREDIENTS

– 1/4 cup (56g) unsalted butter, melted and slightly cooled – 2 large egg – 1 teaspoon vanilla extract – 3/4 cup (150g) granulated sugar – 1/2 cup (42g) unsweetened cocoa powder – 1/2 teaspoon baking soda – 1/4 teaspoon salt – 1/2 cup (60g) all-purpose flour – 3/4 cup (127g) semisweet chocolate chip – 1 & 1/4 cups shredded zucchini (about 1 medium zucchini)*

INSTRUCTIONS

Step 1

Warm the oven up to 350°F. Prepare a 9-inch square baking dish by greasing it. You can grease the parchment paper and put it inside the pan if you want to.

Step 2

Put the cooled butter, eggs, and vanilla in a big bowl. Add the salt, baking soda, cocoa powder, and sugar and mix well. Mix everything together.

Step 3

Add the flour and mix just until it's all mixed in, but there should still be a few flour spots left.

Step 4

Add the zucchini and chocolate chips and mix well. Spread the batter out evenly in the pan that has been prepared.

Step 5

If you stick a pick into the middle and it comes out with a few moist bits, the cake is done. Let it cool on a wire rack in the pan before cutting it into bars.
