Easter Cookie Bars

Who doesn't adore a cute holiday treat? Interactive Easter Cookie Bars are entertaining for kids of all ages.  

Ingredient

For the cookie bar – 3 & 3/4 cups all-purpose flour – 1/2 teaspoon baking powder – 1/2 teaspoon baking soda – 1/2 teaspoon table salt – 1 cup unsalted butter softened – 1 & 1/2 cups granulated sugar – 3 large eggs – 2 teaspoons vanilla extract – 1/2 teaspoon almond extract optional – 1/4 cup confetti sprinkles For the coconut frosting – 1/2 cup unsalted butter softened – 3 cups powdered sugar – 1/4 cup cream of coconut – 1 teaspoon vanilla extract – 1 teaspoon coconut extract – pinch table salt For assembly – 1 & 1/2 cups sweetened coconut flake – green food coloring – Easter peeps or easter candy – Jelly bean

Introduction 

Heat the oven to 375°F. Line a 9x13 baking dish with parchment paper and coat with nonstick cooking spray. Let it wait till Easter cookie bars are baked.

Mix the flour, baking powder, baking soda, and salt in a large bowl and set aside. Combine room-temperature butter and

sugar in a stand mixer with the paddle attachment or a hand mixer and large mixing basin for 3 minutes until light and fluffy. 

Step 3

Each egg should be added to the bowl and stirred well until fully absorbed. Mix in vanilla and almond extracts (if using).  

Step 4

Mix the dry ingredients slowly with the butter to avoid dry spots. Do not overmix. Scratch sides. Combine rainbow confetti sprinkles gently. 

Step 5

Bake flat cookie batter. Preserve consistency. Cookie bars should be softly golden brown and a toothpick inserted into the center comes out mostly clean after 20–24 minutes in the preheated oven.  

Step 6

Fully wire-rack-cool. Avoid melting by cooling before icing. Mix coconut frosting while the cookie bar cools. Smooth unsalted butter in a stand mixer with the paddle attachment or a large basin with a hand mixer.  

Step 7

Sprinkle powdered sugar slowly. Bowls may leak immediately. Mash well. Mix salt, coconut cream, vanilla, and essence. Combine. Sides scratch. 3 minutes medium-high whip icing.
