Easy Blueberry Coffee Cake Recipe 

Taste the tanginess of blueberries and buttery crumbles in this delectable Blueberry Coffee Cake. This delicious and tasty cake will become a family favorite for leisurely weekend mornings or afternoon coffee. 


For the Cake: – 1½ cups all-purpose flour – ¾ cup granulated sugar – 2 teaspoons baking powder – ½ teaspoon salt – ½ cup unsalted butter, softened – 2 large egg – ½ cup milk – 1 teaspoon vanilla extract – 1½ cups fresh or frozen blueberries (if using frozen, do not thaw) For the Streusel Topping: – ½ cup all-purpose flour – ⅓ cup granulated sugar – ¼ cup cold unsalted butter, cubed – 1 teaspoon ground cinnamon Optional Glaze: – ½ cup powdered sugar – 1-2 tablespoons milk – ½ teaspoon vanilla extract

Step 1

Heat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.

Step 2

Mix the cake flour, sugar, baking powder, and salt in a medium bowl. Cut softened butter with a pastry cutter or two forks until coarse crumbs form.

Step 3

Whisk eggs, milk, and vanilla extract in another basin until completely blended. Stir the wet ingredients into the dry ingredients until just mixed. Do not overmix.

Step 4

Spread blueberries evenly in the batter by gently folding. Spread batter evenly in the prepared cake pan using a spatula.

Step 5

Mix flour, sugar, cold butter cubes, and ground cinnamon in a small basin to make the streusel topping. Mix with fingertips or fork until crumbly.

Step 6

Evenly sprinkle streusel topping over cake batter in pan. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean and the top is golden brown.

Step 7

Transfer the cake to a wire rack to finish cooling after 10 minutes in the pan. The optional glaze is made by whisking powdered sugar, milk, and vanilla extract until smooth.
