Easy Crustless Zucchini Quiche Recipe

Need something quick, healthy, and tasty? Use this easy crustless zucchini quiche. It makes a pleasant, healthful breakfast, lunch, or light dinner.

INGREDIENTS

– 2 medium zucchinis, grated – 1 small onion, finely chopped – 1 cup shredded cheese (cheddar or mozzarella work well) – 4 egg – 1/2 cup milk (you can use dairy or plant-based milk) – 2 tablespoons olive oil – 2 cloves garlic, minced – 1 teaspoon dried thyme – Salt and pepper to taste – Optional: sliced cherry tomatoes or bell peppers for garnish

Step 1

Preheat your oven:- Coat a pie or baking dish with olive oil and preheat the oven to 375°F (190°C).

Step 2

Prepare the zucchini:- A box grater or food processor may grind zucchini. Squeeze off excess moisture with a clean kitchen towel or cheesecloth after grating.

Step 3

Sauté the onions and garlic:- Cook olive oil in a skillet on medium. Chop onions and cut garlic. Sauté till transparent and aromatic, 3–4 minutes. 

Step 4

Combine ingredients:- Mix eggs and milk in a large bowl. Add grated zucchini, sautéed onions and garlic, shredded cheese, dried thyme, salt, and pepper. Blend everything.

Step 5

Bake:- Pour the mixture into the buttered pie or baking dish. Add sliced cherry tomatoes or bell peppers for color and taste. The quiche should be set and golden brown after 30–35 minutes in the preheated oven.

Step 6

Serve:- After baking, let the quiche cool for a few minutes before slicing. Serve hot and enjoy!
