Healthy Air Fryer Meatballs Recipe

Air-fried meatballs are juicy and soft within and crunchy outside. These meatballs go well in spaghetti, sandwiches, and appetisers!

INGREDIENTS

– 2 egg – 2 tablespoons sour cream or ricotta cheese – ¼ cup milk – 1 cup Italian-seasoned breadcrumb – 2 tablespoon unsalted butter – 1 tablespoon olive oil – 2 shallots finely diced – 3 cloves garlic minced or grated – 1 pound ground beef I recommend using 80/20 ground beef – 1 pound ground pork – ⅓ cup freshly grated Parmesan cheese – ⅓ to ½ cup finely minced fresh parsley – 1 teaspoon Italian seasoning – Salt and pepper to taste

Step 1

Mix the eggs, milk, sour cream or ricotta, and breadcrumbs in a small bowl. Let soak 20 minutes. 

Step 2

While everything soaks, melt butter and olive oil in a skillet. Cook the shallots for 3-5 minutes, then add the garlic for another minute. Stop cooking and set aside. 

Step 3

Ground beef, pork, parmesan, parsley, soaked breadcrumbs, Italian seasoning, shallot combination, and two large pinches of salt and pepper should be placed in a large basin.

Step 4

Mix by hand until completely combined.  Refrigerate the meatball mixture for 20 minutes. This aids portioning. 

Step 5

Pat a tablespoon of the mixture into a small patty and sear it in a skillet while it rests. Test the patty and adjust the meatball mix's salt and pepper.

Step 6

Portion all the meat onto a lined or sprayed baking sheet using a cookie scoop (2 teaspoons). Roll each meatball into a ball with your palms after portioning. Avoid oversqueezing the mix to avoid dense meatballs. 

Step 7

Once rolled, lightly brush meatballs with cooking spray. This will brown them well. Pre-heat your air fryer for 5 minutes at 400°F.

Step 8

Put the meatballs in the air fryer basket in batches, depending on its size. Flip meatballs halfway through cooking at 400°F for 10 minutes. Add to pasta sauce, use in recipes, or freeze.
