Vanilla wafers are easy to prepare and taste better than store-bought! These delicate, crispy cookies with sweet vanilla flavor are irresistible.
INGREDIENTS
– 1 & 1/2 cups (180g) all-purpose flour– 3/4 teaspoon baking powder– 1/2 teaspoon salt– 1/2 cup (113g) unsalted butter, softened– 1 tablespoon vanilla bean paste or vanilla extract– 2/3 cup (133g) granulated sugar– 1 large egg– 1 tablespoon heavy cream
Heat the oven to 350°F. Cover baking sheets with parchment or silicone. Mix flour, baking powder, and salt. Set aside.
Step 1
INSTRUCTIONS
Blend butter and vanilla bean paste with a medium-speed electric mixer. Add sugar and beat until frothy. Stir in egg and cream.
Step 2
Slow the mixer to low and add the flour. Just blend. Roll 2 teaspoons of dough into balls and place on prepared pans. Lightly flatten each cookie's top.
Step 3
The cookies should be golden brown after 12–15 minutes on each pan.
Step 4
Place pans on wire racks. Transfer the cookies from the pans to a wire rack to finish cooling after 5 minutes.
