Cheesy, crunchy, and loaded with your favorite toppings, these Loaded Potato Skins are the perfect party and game day snack.

Ingredient

For the potatoes: – 8 small russet potatoe – 1 tablespoon olive oil – 2 teaspoons kosher salt – For the potato skins: – 3 tablespoons salted butter melted – ½ teaspoon black pepper – ¼ teaspoon garlic powder – ¼ teaspoon onion powder – ¼ teaspoon smoked paprika For the filling: – 8 ounces shredded sharp cheddar cheese – 8 slices bacon cooked crispy and crumbled – Sour cream to serve – Thinly sliced scallions to serve

Introduction

Warm the oven up to 400°F. Take a paper towel and pat the potatoes dry. Then put them on a baking sheet. Next, poke holes in the potatoes all over with a stick.

Step 1

This lets the steam escape from inside. Brush olive oil on the outside of the potatoes with a pastry brush. Then, sprinkle salt all over to cover.

Step 2

Bake for 30 to 60 minutes, or until a knife can easily go through the potatoes (this will depend on how big they are). Let it cool all the way down or until it's safe to touch.

Step 3

Put the smoked paprika, pepper, garlic powder, onion powder, and melted butter in a small bowl. Stir the ingredients together until they are well mixed.

Step 4

For each potato, cut it in half and scoop out the inside. You should leave about ¼ inch of the potato skin on. Put the potatoes on the baking sheet cut side down.

Step 5

Then, use half of the butter mixture to cover the outside. After 8 minutes, turn the potatoes over and brush the inside with the rest of the butter mixture.

Step 6

Just until the edges are golden brown and crispy, bake for 8 more minutes. Finally, cover the inside of the potato skins with cheese and bacon.

Step 7

Add five more minutes of baking and make sure the cheese melts. If you want, you can serve it right away with sour cream and onions.
