Panera Bread Broccoli Cheddar Soup Recipe

One of our favorite dinnertime dishes, this Copycat Panera Bread Broccoli Cheddar Soup Recipe is comforting, tasty, and quick.  


– ½ cup + 2 tablespoons unsalted butter divided – 1 small onion small diced – 2 stalks celery small diced – 2 cloves garlic minced – ½ cup all-purpose flour – 2 cups whole milk – 3 cups chicken stock – 3 cups chopped broccoli – 1 cup matchstick carrot – ½ teaspoon kosher salt – ¼ teaspoon pepper – 3 cups freshly shredded cheese  


In a large saucepan, melt two tablespoons of butter by heating it over medium heat. After adding the onion and celery, continue to cook for approximately five minutes,

or until the vegetables are soft and transparent. After adding the garlic, continue to cook for one complete minute. Take the food out of the pan once it has done cooking and set it aside.

The remaining half cup of butter should be melted in the pan, and then ½ cup of flour should be whisked in until it is completely incorporated, which should take about one minute. 

Step 3

Gradually include the milk while continuously stirring. It is important that the mixture be thick and smooth. The chicken broth, broccoli, carrots, onions, garlic,

and celery that have been boiled should be added. Prepare the mixture by bringing it to a boil, then lowering the heat and continuing to cook it for around thirty minutes, uncovered,

until the broccoli and carrots are cooked. Taking the pan off the heat, add the cheese, salt, and pepper, and stir until the cheese is melted and distributed evenly throughout the pan.  

Step 6

The first half of the soup should be placed in a blender, and after a few rapid pulses, it should be returned to the pan. 

Step 7

In order to create a traditional Panera-style lunch, serve the dish with a side of sourdough bread or in a bowl made of sourdough bread.
