Peanut Butter Banana Upside Down Cake Recipe

My favorite flavor combination is peanut butter and banana forever. I know how nostalgic peanut butter and banana sandwiches are if you grew up on them! I knew I had to make a banana upside down cake since peanut butter and bananas are a match made in heaven.  

Banana Topping – 4–5 yellow bananas (not ripe) – 10 tbsp Danish Creamery unsalted European style butter, melted and warm – 1 1/4 cup (260g) light brown sugar, packed Peanut Butter Cake – 2 1/2 cups (330g) all purpose flour *see notes for GF option – 2 tsp baking powder – 1/2 tsp salt – 1 cup (200g) granulated sugar – 1/2 cup (100g) light brown sugar, packed – 3/4 cup (200g) creamy peanut butter – 1/2 cup (110g) Danish Creamery unsalted European style butter, melted and cooled – 2 tsp vanilla extract – 3 large eggs, room temp – 1 cup (240ml) whole milk, room temp

Banana Topping To prepare, preheat oven to 350F and line a 9x13 baking dish with parchment paper, covering the bottom and two long sides.

Stir the warm melted butter and brown sugar until the butter is no longer separated and the mixture is paste-like. Cover the bottom of the baking dish with the mixture and spread it evenly.

Peel and cut bananas lengthwise along the center. Put cut-side-down bananas in butter and brown sugar. Cover as much surface as possible with uniformly spaced bananas (see post image). Set aside.

Peanut Butter Cake  Mix flour, baking powder, and salt in a medium bowl. Set aside. Mix sugars, peanut butter, and melted butter in a large bowl.

Step 4

Whisk in eggs and vanilla after smoothing. Mix the dry ingredients in thirds and the milk in two, alternating. Mix dry, milk, dry, milk, dry. The batter should be thick but whiskable.

Move the bowl as you pour the batter over the bananas to avoid clumping. It can impede banana distribution below.

Spread the batter evenly and bake for 45–50 minutes until the edges and surface are softly brown and a toothpick inserted in the center comes out lean with a few moist crumbs.

Remove the cake from the oven and set a 10-minute timer. Lifting the parchment paper edges after 10 minutes will loosen the cake. Put an upside-down cooling rack or serving dish on the cake pan.

Step 8

Flip the cake onto the cooling rack and place it down with one hand on top and one beneath the pan. Lift the pan and peel the paper to see the caramelized bananas. While the cake is warm, slice and serve. Enjoy!
