Peanut Butter Cookie in a Mug Recipe

It takes less than five minutes to prepare this tasty single-serve gluten-free peanut butter cookie in a cup, making it the ideal serving size for one or two people!  

– 1 Tbsp unsalted butter* – 3 Tbsp creamy peanut butter – 2 Tbsp pure maple syrup – 1 egg yolk – ½ tsp pure vanilla extract – 2 ½ Tbsp gluten-free all-purpose flour or regular all-purpose flour – ⅛ tsp sea salt

Melt butter in mug that is safe to use in the microwave in 20 to 40 seconds. Nota: Using a rubber spatula

I move the cookie dough from a measuring cup or small bowl to a mug or ramekin that is safe to microwave.

A mug can be used for the entire process, reducing cleanup. Mix peanut butter, pure maple syrup, egg yolk, and vanilla essence until fully blended.

Note: Microwave peanut butter and butter together to soften them so they stir easily after being refrigerated.

Mix in the gluten-free all-purpose flour and sea salt until a homogeneous dough forms. The mixture will be thin and not like cookie dough—this is normal!

Add chocolate chips to the cookie dough or sprinkle them on top. Use the microwave's default high heat setting for 45–60 seconds to set up.

Start with 45 seconds and microwave longer if needed. Wait a minute or two before eating the peanut butter cookie because the mug will be hot!

Although crumbly, the cookie melts in your tongue. Serve microwave peanut butter cookies with ice cream or milk.
