– 1 ½ pounds boneless skinless chicken breasts cut into bite-sized piece – 2 teaspoons garlic powder – 1 teaspoon onion powder – 1 teaspoon fine sea salt – ½ teaspoon black pepper – For the dredge: – 2 cups all-purpose flour – ½ cup cornstarch – 2 teaspoons fine sea salt – 1 teaspoon black pepper – 1 teaspoon sweet paprika – 1 large egg – ½ cup buttermilk – 1 ½ teaspoons hot sauce – Peanut oil for frying or other frying oil

Set aside a parchment-lined sheet tray. Stir the cut-up chicken, garlic powder, onion powder, salt, and pepper in a medium bowl to coat.

Step 1

Stir flour, cornstarch, salt, pepper, and paprika in another medium basin for the dredging. In a third bowl, mix egg, buttermilk, and spicy sauce.

Step 2

Season the chicken, throw it in the flour, shake off the excess, and then stir it in the egg mixture.

Step 3

Take handfuls of breaded chicken and return it to the flour mixture, pressing the flour around it and shaking off the excess.

Step 4

Add the leftover chicken to the sheet tray and repeat. Over medium heat, add 2 inches of peanut oil or other frying oil to a dutch oven or heavy-bottom skillet.

Step 5

Allow oil to get 325-350°F. Drop chicken pieces carefully into the oil, but don't overcrowd the pan—fry in batches. To avoid sticking and burning, stir the chicken with a slotted spoon.

Step 6

After 5 minutes at 165°F and golden brown, remove the chicken using a slotted spoon. To absorb oil, place them on a paper towel-lined platter.

Step 7

To avoid sogginess, arrange chicken pieces on a wire rack on a sheet tray. Serve the remaining chicken hot with your preferred dipping sauce.
