Simple Cherry Sheet Cake Recipe

Summertime is the ideal time to make this Cherry Sheet Cake! Delicious, sweet, and bursting with cherries, these make the ideal afternoon snack or dessert.   

– 1 cup butter  – 1 cup sugar – 1 tablespoon vanilla sugar – 4 large egg – 1 tablespoon lemon zest – 2 cups all-purpose flour – 2½ teaspoon baking powder – ¼ teaspoon salt – 1 pound cherries  – powdered sugar

Coat a 913 or 1015 baking dish with cooking spray, line it with parchment paper and then coat the paper with the spray.

Beat together the butter, sugar, and vanilla sugar in a mixing bowl until frothy and light. Beat well after adding the eggs. Stir in the zest of the lemon.

Flour, baking powder, and salt should all be combined in a medium-sized bowl.

Mix the flour mixture into the egg mixture on low speed until barely incorporated.

Using a spatula to smooth it out, distribute the batter equally throughout the pan. The cherries should then be equally distributed on the cake's top.

The cake will rise around the cherries as it bakes, so be careful not to press them down too much.

To ensure the cake is done, push a toothpick into the centre; if it comes out clean, the cake is done.

Bake for light and golden brown, about 30 minutes. After letting cool, sprinkle with powdered sugar, slice, and serve.
