White chocolate macadamia nut cookies are chewy bakery treats with crunchy macadamias and creamy white chocolate chips!
INGREDIENTS
– 2 & 1/4 cups (270g) all-purpose flour– 1/2 teaspoon baking soda– 1/2 teaspoon salt– 3/4 cup (170g) unsalted butter, softened– 1 cup (200g)firmly packed light brown sugar– 1/3 cup (67g) granulated sugar– 1 large egg– 1 large egg yolk– 1 teaspoon vanilla extract– 1 cup (170g) white chocolate chip– 1 cup (120g) chopped macadamia nut
Mix flour, baking soda, and salt. Set aside. Beat butter, brown sugar, and sugar until frothy using a medium-speed electric mixer.
Step 1
INSTRUCTIONS
Put the whole egg in, then the yolk. Mix in vanilla. Lower mixer speed. Add the flour mixture slowly, mixing just until incorporated or a few flour streaks remain.
Step 2
Add white chocolate chips and macadamia nuts. Cover and refrigerate dough for 1 hour. Heat the oven to 350°F. Cover baking sheets with parchment or silicone.
Step 3
Two-tablespoon quantities of dough are dropped onto prepared pans. Lightly flatten cookie tops.
Step 4
The cookies should be golden brown after 15–18 minutes on each pan. Let the cookies cool for 5 minutes on wire racks. Transfer the cookies to a wire rack to finish cooling.
