Grandma's Caramel Pecan Logs, a family favourite, are my pleasure! Its nougat centre, caramel coating, and pecan roll are irresistible.  

Ingredient

– ½ cup salted butter – ½ cup light corn syrup – ½ cup granulated sugar – 4 cups powdered sugar – ½ cup powdered milk – 2 teaspoons vanilla extract – 16 ounces caramels 1 & ½ bag – 4 & ½ tablespoons milk – 4 cups 

Introduction 

Spray a 9-inch baking dish with cooking spray and put aside. Mix butter, corn syrup and sugar in a medium pot or Dutch oven. 

Step 1

Stir constantly over medium-low heat until the butter melts and everything is combined. 

Step 2

Increase stirring until the mixture simmers. Off the heat, add vanilla, powdered sugar, and powdered milk. Mixture becomes thick paste. 

Step 3

Press this mixture into the prepared baking dish. Let it sit at room temperature for 30 minutes before touching. Cut the filling into four even strips. 

Step 4

Each strip should have eight parts after cutting down the middle. Line a parchment paper with filling. Roll the paper into a log. Flatten it on a sheet tray with the seam down. 

Step 5

Add remaining filling. Freeze the filling for 1–2 hours until solid. Stir milk and caramels in a double saucepan over medium heat until caramels melt.  

Step 6

Place chopped nuts in a shallow basin. Each log should be dipped into the caramel, covering it and letting any excess drip off. This step may be difficult, but try. 

Step 7

Using a gentle press and roll, cover the log with pecans. Put the finished log on a lined sheet tray while rolling the others. Cut into ½-inch pieces and serve immediately.
