Best Lemon Blueberry Bars with Golden Oreo Crust Recipe

A rich and creamy baked cheesecake bar with golden Oreo crust, these Lemon Blueberry Bars are full of lemon and juicy blueberries that the whole family will love!  


– 18 Golden Oreos crushed/crumb – 3 tablespoons unsalted butter melted – 8 ounces cream cheese softened – 1/3 cup sour cream – 1/3 cup granulated sugar – 1/2 teaspoon vanilla extract – 1 large egg – 2 tablespoons all-purpose flour – 1 tablespoon lemon juice fresh squeezed – 1 lemon zested – 1 cup blueberrie


Preheat the oven to 325 degrees Fahrenheit. An 8×8 baking pan should be lined with either foil or parchment paper, and then placed aside.  

Step 1

After combining the butter and crushed Oreo cookies, press the mixture into the pan. 

Step 2

The cream cheese should be added to a large bowl that is equipped with a hand mixer or in the body of a stand mixer that has the paddle attachment.  

Step 3

The mixture should be mixed on medium speed until there are no lumps present. The sour cream, sugar, vanilla, egg, flour, lemon juice, and lemon zest should be added at this point.  

Step 4

When necessary, scrape down the sides of the bowl while mixing on medium speed until everything is incorporated. To the 8×8 pan,

add three quarters of the blueberries and fold them in. Then, pour the mixture on top of the crust. Lastly, sprinkle the remaining blueberries on top. 

Step 6

Bake the cake until the center is slightly jiggly and the sides are golden, 36 minutes. After cooling on the counter, cover the pan and refrigerate for four hours or a day to set.
