Best Pavlova Recipe with Cream and Berrie

Ingredient

For the pavlova – 4 large egg whites – pinch salt – 1 & 1/4 cups powdered sugar – 2 teaspoons cornstarch – 1 teaspoon white vinegar – 1 teaspoon vanilla extract For the pastry cream – 2 cups whole milk – 1/4 + 1/3 cup granulated sugar divided – 2 large egg yolks – 1 large whole egg – 1/4 cup cornstarch – 2 tablespoons unsalted butter – 1 teaspoon vanilla extract Additional Topping – 3 ounces fresh blueberries – 3 ounces fresh raspberrie – 1 & 1/2 cups fresh strawberries diced – whipped cream optional

Introduction 

Preheat oven to 350°F. Invert a parchment paper to expose a pencil-marked 9-inch circle. Reserve on a large baking sheet. 

Step 1

Mix egg whites and salt in a stand mixer dish with the whisk attachment or a large bowl with a hand mixer. Start slowly and accelerate to glossy soft peaks. 

Step 2

Scrape sides and add powdered sugar one tablespoon at a time. After adding all the powdered sugar, whip the egg whites on medium-high speed until glossy stiff peaks form. 

Step 3

Mix cornstarch, vinegar, and vanilla. Place meringue on parchment-lined tray. Follow the pencil lines to flatten the meringue, smooth the sides,

and make a spoon-made indentation in the center to retain the toppings for presentation. Place on center rack and immediately lower heat to 300°F. Baking 1 hour 15 minutes. 

Step 5

Close the oven and cool the meringue. Might take 6+. Try the night before. Blend milk and 1/4 cup sugar in a medium pot. Stir frequently over medium heat while boiling. Mix egg yolks, whole egg, 

Step 6

cornstarch, and 1/3 cup granulated sugar in a large bowl while heating. Beat well. Slowly add hot milk to boiling eggs while stirring. Put the egg mixture and milk back in the sauce pot. Boil again on medium, stirring often. 

Step 7

Melt butter after boiling. Mix vanilla. Prevent peeling by wrapping pastry cream in plastic in a medium basin. Refrigerate.
