Buttery Coffee Cake Recipe

This coffee cake is based on the style from New York. It has EXTRA crumble on top and a very rich and buttery cake on the bottom. So rich and creamy, but not too sweet—just the right amount of sweetness for coffee cake.  

Crumble – 1 2/3 cup (215g) all-purpose flour – 1/4 cup (30g) cornstarch – 1/2 cup (105g) light brown sugar, packed – 1/2 cup (100g) granulated sugar – 1 tsp ground cinnamon – 3/4 cup (180g) salted Kerrygold butter, melted Coffee Cake – 1/4 cup (55g) salted Kerrygold butter, room temp – 3/4 cup (150g) granulated sugar, divided – 2 large eggs, room temp – 1 tbsp vanilla extract – 1 cup (230g) sour cream, room temp – 3/4 tsp baking soda – 1/4 tsp kosher salt – 1 1/2 cups (195g) all-purpose flour – Powdered sugar, for dusting

Crumble Mix flour, cornstarch, brown sugar, sugar, and cinnamon in a medium basin. Add the butter and stir until the crumble is well moistened. It should be clumpy and dense.

Put the bowl in the fridge when making cake batter. Coffeecake Preheat the oven to 350F and place the rack in the middle.

Prepare an 8x8 pan with parchment paper and grease. After baking, let the paper reach up and over the sides for easy removal.

Add butter and 1/2 cup sugar to a hand or stand mixer bowl with the paddle attachment. Make creamy, light, and fluffy on medium-high speed. Add the remaining 1/4 cup sugar and stir.

After mixing one egg, scrape the basin and add the other egg and vanilla. After smoothing, add sour cream, baking soda, and salt. Stir in flour last.

Step 5

When it seems thoroughly blended, use a rubber spatula to gently mix the batter a couple times by hand to ensure even mixing. Spread batter in pan.

Step 6

Remove the crumble from the fridge and evenly cover the cake batter, ensuring no cake batter shows. Bake until the cake rises evenly and has golden brown edges, 50–55 minutes.

Step 7

After cooling for 30–45 minutes, remove the cake from the pan. Sprinkle powdered sugar, slice, and enjoy!
