Chocolate Chip Meringue Brownies Recipe

The meringue on these delicious brownies is light and airy. Chocolate chips give these brownies the perfect crunch, making them irresistible! 

INGREDIENTS

FOR THE BROWNIES: – 1 cup (120g) all-purpose flour – 1 teaspoon baking powder – 1/3 cup (28g) cocoa powder – 3/4 cup (150g) granulated sugar – 1/2 cup (100g) light brown sugar – 3 large egg – 1/2 cup (118ml) milk – 1/2 cup (113g) melted butter, slightly cooled – 1 cup (170g) chocolate chip FOR THE MERINGUE: – 3 large egg white – 1/2 cup (100g) granulated sugar – 1 teaspoon lemon juice – 1/2 cup (85g) semisweet or dark chocolate chip

INSTRUCTIONS

Step 1

MAKE BROWNIES: Heat the oven to 350°F. Grease and parchment a 9"x9" pan. 

Step 2

Mix flour, baking powder, cocoa powder, granulated sugar, and brown sugar in a large bowl. 

Step 3

Whisk eggs, milk, and melted butter in another basin. Add the wet mixture to the dry ingredients and whisk until mixed. Add chocolate chunks and stir again. 

Step 4

Place batter in pan and spread evenly. Bake brownies for 25–30 minutes until almost set but the center wobbles. Let brownies cool in the pan on a wire rack after baking.

Step 5

MAKE MERINGUE: Place egg whites, lemon juice, and sugar in a heatproof bowl (ideally stainless steel or glass). 

Step 6

Place the bowl over simmering water. Simmering water should not touch the basin, which should fit tightly. Stir regularly until the sugar melts and the mixture is hot. 

Step 7

The meringue should reach 160°F. Then remove the bowl from heat.  Beat 5-6 minutes till white and fluffy using an electric or stand mixer. 

Step 8

Add chocolate chunks and mix gently. Frost and serve brownies with meringue.
