INGREDIENTS

Mix flour, baking powder, and salt. Set aside.

Mix sugar, oil, and cocoa powder in a separate dish with a medium-speed electric mixer. Mix in the eggs one at a time, then the vanilla.

Add flour to cocoa mixture and whisk until moistened. Thicker, stickier dough. Cover and refrigerate dough for 4 hours or overnight.

Heat the oven to 350°F. Cover baking sheets with parchment or silicone. The remaining 1/4 cup of granulated sugar and confectioners' sugar should be in shallow bowls.
Step 4
Roll tablespoons of dough into balls. First lightly coat each ball in granulated sugar, then generously in confectioners' sugar. Put dough balls on prepared pans, allowing 2 inches between them.

Bake each pan for 12–14 minutes until the centers are almost set. Refrigerate dough between batches. Softer cookies require a shorter baking time. Bake longer for crisper cookies.

Cool cookies on pans on wire racks for 5 minutes. Move the cookies from the pans to a wire rack to finish cooling.
