Chocolate Ganache Brownies Recipe

Ganache Brownies are perfect for chocolate lovers. There's lots of chocolate!

INGREDIENTS

FOR THE BROWNIES: – 6 ounces (1 cup) bittersweet chocolate (+/- 70%) – 1/2 cup unsalted butter – 1/2 cup granulated sugar – 1/2 cup packed light brown sugar – 2 large egg – 2 teaspoons vanilla extract – 1 cup all-purpose flour – 1/2 teaspoon salt – 1/2 cup semisweet chocolate chip FOR THE GANACHE: – 4 ounces bittersweet chocolate, roughly chopped – 4 tablespoons heavy cream – 2 tablespoons unsalted butter, cut into small cube – chopped toasted pecans, optional

INSTRUCTIONS

Step 1

MAKE BROWNIES: Preheat oven to 350°F. Parchment paper should overflow two edges of an 8-inch square baking pan by a few inches.

Step 2

Put chocolate and butter in a microwave-safe bowl. In 30-second increments, microwave at half power until butter and chocolate melt when mixed. Stir smooth. Let cool slightly.

Step 3

Blend sugar, brown sugar, eggs, and vanilla. Beat in chocolate-butter mixture until smooth. Mix in flour and salt until mixed. Mix in chocolate chips.

Step 4

Spread batter in prepared pan. Bake for 35–40 minutes or until a pick inserted into the center comes out with moist crumbs. Run a knife along the pan's non-lined sides. Pan-cool on wire rack.

Step 5

Remove the cooled brownies from the pan to a cutting board using the overhanging parchment paper. Cut bars with a sharp knife.

Step 6

MAKE GANACHE: Put chocolate in a heatproof bowl. Set aside. Put cream and butter in a heavy saucepan. Boil on medium-high. 

Step 7

Remove cream from heat and pour over chocolate. Wait 5 minutes. Keep stirring until smooth.

Step 8

Dip brownie tops in ganache. Sprinkle pecans on brownies if desired. Set on a wire rack to set ganache.
