These rich chocolate brownies taste great and are extra gooey thanks to the swirls of dulce de leche.
INGREDIENTS
– 6 ounces (1 cup) bittersweet chocolate (+/- 70%)– 1/2 cup unsalted butter– 1/2 cup granulated sugar– 1/2 cup packed light brown sugar– 2 large egg– 1 & 1/2 teaspoons vanilla extract– 1 cup all-purpose flour– 1/2 teaspoon salt– 1/2 cup dulce de leche– 1/2 cup cashews, toasted and coarsely chopped
INSTRUCTIONS
Step 1
Preheat oven to 350°. Grease or line an 8-inch square baking pan with parchment paper that overhangs by a few inches on two edges.
Step 2
Put chocolate and butter in a microwave-safe bowl. In 30-second increments, microwave at half power until butter and chocolate melt when mixed. Stir smooth. Let cool slightly.
Step 3
Blend sugar, brown sugar, eggs, and vanilla. Beat in chocolate-butter mixture until smooth. Mix in flour and salt until mixed.
Step 4
Spread batter in prepared pan. Pour dulce de leche on brownies. Stir dulce de leche into brownie batter with a small knife. Sprinkle cashews on top.
Step 5
Bake for 35–40 minutes or until a pick inserted into the center comes out with moist crumbs. Cut into bars after cooling on wire rack in pan.
Step 6
Lift the cooled brownies onto a cutting board using the overhanging parchment paper if you lined the pan. Cut bars with a sharp knife.
