Delicious Air Fryer Zucchini Chips Recipe

These air-fried zucchini chips are a tasty appetiser or side dish topped with parmesan breadcrumbs.

INGREDIENTS

– 3-4 small zucchini cut into ¼-inch round – ½ cup all-purpose flour – 2 tablespoons cornstarch – 2 large egg – 1 cup unseasoned breadcrumb – 1 tablespoon italian seasoning – 1 teaspoon fine sea salt – 1 teaspoon black pepper – 1 teaspoon garlic powder – ¼ cup freshly grated parmesan cheese

Step 1

Take 3 shallow dishes or pie plates. In the first, mix flour and cornflour. Gently beat eggs in the second. In the third, mix breadcrumbs, italian seasoning, salt, pepper, garlic powder, and parmesan.

Step 2

Pre-heat the air fryer for 5-10 minutes at 400°F. As the air fryer heats up, dredge the zucchini rounds in flour, then eggs, then breadcrumbs. Prepare the rounds for air frying on a parchment-lined baking sheet.

Step 3

Lay some breaded rounds in a single layer in your air fryer basket. Mist the tops with olive oil or cooking spray. 

Step 4

Air fry at 400°F for 5 minutes, flip the rounds, spritz the edges with olive oil or frying spray, and cook for 5 more minutes until crispy and golden brown.

Step 5

Continue with the remaining breaded zucchini rounds as needed for your air fryer size. Serve heated with marinara or ranch.
