Ingredient
– 2 & 1/2 cups all-purpose flour– 1/2 cup unsweetened cocoa powder– 1 tablespoon baking powder– 1/2 teaspoon baking soda– 1/2 teaspoon salt– 2 large eggs– 1 cup granulated sugar– 1 cup whole milk or 2%– 1/2 cup vegetable oil– 1/3 cup sour cream– 1 teaspoon vanilla extract– 2 heaping teaspoons Nutella– Decorator's sugar garnish, optional
Introduction
Heat the oven to 425°F. Put two 12-cup muffin tins with baking spray or paper liners aside.
Step 1
Mix flour, cocoa powder, baking powder, baking soda, and salt in a medium basin. Mix eggs and granulated sugar in a large bowl until blended.
Step 2
Pour oil, sour cream, and vanilla extract into the bowl and whisk until smooth. Stir dry ingredients into wet ingredients until no dry spots remain.
Step 3
Pour 1 and ½ tablespoons of batter into 22 greased/lined muffin cups. For this, I recommend a 1 & ½ tablespoon cookie scoop.
Step 4
Put 1 heaping spoonful Nutella in each muffin center. Pour another 1.5 teaspoons of batter on top. The batter on top should cover Nutella thoroughly.
Step 5
If using, sprinkle decorator's sugar on muffins. Bake muffins 5 minutes at 425°F. Leave the muffins in the oven at 350°F for 10-13 minutes.
Step 6
The muffins will puff, crack, and seem dry when done. Insert a toothpick halfway between the center and edge of the muffin.
Step 7
Nutella may stick to the toothpick, but the batter should come out clean. Wait 5 minutes to cool the muffins in the tin. Remove and cool on a wire rack.
