Green Curry Fried Rice Recipe

– 1 tablespoon vegetable oil or coconut cream – 2 tablespoons green curry paste – 2 cloves garlic – 1 cup protein of your choice – 3 green onions  – 1 cup mixed vegetable – 1 tablespoon fish sauce – 1 teaspoon sugar – 2 cups cooked jasmine rice – Fresh basil leaves for garnish – Lime wedges for serving

Make jasmine rice according to the package instructions and let it cool or use leftover rice.  

Step 1

Cut green onions, dice veggies, and thinly slice chicken breast. Heat coconut cream or vegetable oil over medium-high heat in a large wok or skillet.

Stir-fry minced garlic for 30 seconds until fragrant. After the garlic is fragrant, add green curry paste to the wok and stir-fry for 1-2 minutes to blend flavours.

Stir sauté sliced chicken till done. Fry chopped onions till transparent.

Diced mixed veggies should be stir-fried until crisp but soft in the wok. Put chilled or day-old rice in the wok. Mix the grains, vegetables, and protein, breaking up any clumps.

Add sugar and fish sauce to rice. Mix everything to coat evenly. Continue stirring for 1-2 minutes with chopped green onions until everything is properly mixed and cooked.

Taste and season as needed. Add fresh basil to green curry fried rice. Heat and serve with lime wedges.
