Indian Lentil Curry ( Dal Tadka) Recipe

– Dal – 1 cup split dal – 1 tbsp ghee – 1 tsp cumin seed – 1/4 tso asafoetida – 1 tsp green chilies  – 1 tbsp ginger grated – 1 tbsp garlic minced – 1 cup onions diced – 3 whole tomatoes diced – 1 tsp salt to taste – 1/2 tsp turmeric ground – Tadka (tempering) – 1 tbsp ghee – 1 tsp cumin seed – 2 whole red chillie – 1 tsp chilli powder – 1 tbsp cilantro leave

Cook dal in pressure cooker or stove with 4 cups water. Add asafoetida and cumin seeds to low-heat ghee until they splutter.

Fry onions, green chilies, ginger, and garlic until tender. Combine tomatoes, turmeric, salt, and coriander.

Simmer this mixture for 10 minutes with cooked dal and salt.

Tadka Make tadka while it simmers. Heat all tadka ingredients and ghee or oil to smoking.

Stir this into cooking dal. Turn off heat after cooking. Cover the dal with a heatproof dish.

Add 2 burned bay leaves to the bowl and cover to infuse it with smoke. Serve hot with naan, roti, or steaming rice.
