Mary Berry’s Lemon Cupcakes (+ Lemon Icing Recipe)

Mary Berry’s lemon cupcakes are moist, fluffy, and bursting with lemon flavor! These light, citrus-flavored treats are easy to make and even easier to eat! 

Ingredients: – 175g self-raising flour – 175g caster sugar – 175g softened butter – 3 large egg – Zest of 1 lemon


Preheat oven to 180°C (350°F). Line a cupcake tin with paper cases. 

Beat together butter and sugar until pale and fluffy. Gradually add eggs, then fold in flour and lemon zest. 

Divide batter into cases and bake for 20-25 mins until golden and springy to touch. 

For the icing, mix lemon juice with icing sugar until smooth. Drizzle over cooled cupcakes 

Allow icing to set before serving. Enjoy your delightful lemon cupcakes!
