Mini Ranch Pretzels with Buffalo Cheese Sauce Recipe

– PRETZELS – 1/3 cup warm water – 1 tablespoon honey – 2 1/4 teaspoons active dry yeast – 1 (12 ounce) pumpkin beer – 1/2 cup (1 stick) salted butter, melted – 4 1/2 cups all-purpose flour – 1/4 cup baking soda – 1 egg, beaten – RANCH SEASON – 2 tablespoons dried parsley – 2 tablespoons dried chive – 2 teaspoons dried dill – 2 teaspoons garlic powder – 2 teaspoons paprika – 2 teaspoons onion powder – 1/4 cup pretzel salt

Mix water, honey, and yeast in a stand mixer. Wait 5 minutes for bubbly top.

Pour in beer, butter, and flour. Mix on medium speed for 3–4 minutes until the dough is smooth and pulls away from the bowl. Add flour 1 tablespoon at a time if the dough is too wet.

Keep the bowl covered in a warm area until the dough doubles in size, 1-2 hours. Meanwhile, blend ranch seasoning. Mix everything in a basin.

Heat the oven to 425°F. Parchment two baking sheets. Boil a large kettle of water. Move the dough from the bowl to a floured surface. Divide dough into 16 equal balls.

Make lengthy ropes from each ball. Cross the right side to the left to make pretzels. Flip up and cross right-left again.

Add baking soda to boiling water. Boil 1-2 pretzels for 30 seconds. Remove with a big slotted spoon. Place pretzels on parchment-lined baking sheets.

Brush pretzels with egg and generously season with ranch. Bake pretzels for 10–15 minutes till golden brown.

Meanwhile, make cheese. Butter melts in a pot over medium heat. Mix in flour. Cook for 1 minute on medium-low.

Whisk in the milk slowly, then add both cheeses and mix until smooth. Add buffalo sauce and salt. Serve heated cheese with pretzels.
