It's easy to make my No Bake Strawberry Cheesecake, which is a dreamy summer treat. This rich, scoopable slab cheesecake disappears in a flash!!  

INGREDIENTS

CRUST – 18 sheets whole graham crackers, (2 sleeves) – 1/4 cup granulated sugar – 1/4 tsp salt – 6 Tbsp unsalted butter, melted CHEESECAKE – 16 ounces cream cheese – 1 cup ricotta cheese, whole fat or part skim – 1 cup confectioner's sugar – 4 Tbsp fresh lemon juice – 1/2 cup heavy cream TOPPING – 1 pint strawberries – 1/4 cup granulated sugar – 1/2 tsp cornstarch, dissolved in 1 teaspoon cold water – mint leaves , for garnish, optional

Break crackers in a food processor. Add salt and sugar. Blend till fine. You can grind them by hand with a large baggie and rolling pin, but the processor grinds them more uniformly.

Melt butter and coat crumbs evenly. Crumb-coat your dish. Leave them, not package them. This recipe makes 3 cups of crumbs, which may not be enough for an 8x11 casserole.   

Step 2

Save extras for toppings. During filling, chill crust. Add cream cheese, ricotta, sugar, and lemon juice to a clean food processor. Smooth everything out. Scrape sides as needed.

Step 3

While the machine runs, add cream. Dollop the filling onto the crumbs and carefully spread it out without disturbing them. Use an offset spatula to level the surface. 

Step 4

Refrigerate the cheesecake for several hours or overnight. Meanwhile, make the topping. Cut berries in half. Half the hull and coarsely cut and put to a pot with sugar.

Step 5

Cook the berries for several minutes on medium heat to release their juice and soften. The sauce should thicken rapidly after adding the cornflour slurry.

Step 6

Stir for another minute. Store sauce in the fridge. Leave some white corners on the cheesecake after adding sauce. Slice, quarter, or halve fresh berries and add mint.  

Step 7

Serve in tiny dishes or cups with a large spoon. Keep cheesecake cold until serving for optimal flavour and texture. Cover leftovers in the fridge.
