Rustic Apple Galette Recipe

An apple galette combines buttery, flaky pastry, fresh apples, and a hint of sugar and spice for a simple yet delicious meal.  Fall's favourite dessert requires no pastry expertise.  

INGREDIENTS

FOR THE PIE CRUST (MAKES 2) – 2 1/2 cups all purpose flour – 1 cup (2 sticks) unsalted butter, cold – 1 tsp salt – 1 tsp granulated sugar – 1/2 cup ice water FOR THE APPLE FILLING – 4 medium-large apples, sliced (and peeled if you prefer) – 2 Tbsp brown sugar – 1/2 tsp ground cinnnamon – 1/4 tsp ground nutmeg – 1 pinch salt – 1 Tbsp honey (plus extra for drizzling over the finished galette, if desired) – 1 Tbsp unsalted butter, cold or room temp, cut into small piece

Two pie crusts freeze well from this recipe. Half of your next galette or fall pie is frozen. Make pie crusts by processing flour, butter, sugar, and salt.

INSTRUCTIONS

Pulse until butter is broken up and no large parts left. Slowly add ice water through the food processor's top and pulse until the dough forms a lump.

Step 2

Remove food processor dough and divide in half. Shape each half into an inch-thick disc. Store one half in the fridge until galette-rolling time and freeze the other.

Step 3

Parchment a big baking sheet and preheat oven to 375F. Stir brown sugar, spices, and salt into cut apples. Set aside. Roll the pie dough into a 14-inch circle on a lightly floured surface. 

Step 4

Skinny but tear-resistant. Place rolled dough on baking sheet gently. Spread half the sliced apples evenly in the centre of the dough circle, allowing 1.5 inches for folding.  

Step 5

Place all the apples in the dough's centre or make an overlapping round with the other half. Butter and 1 Tbsp honey on apples. Fold extra pie crust over treats.  

Step 6

If desired, brush milk or cream over the pie dough edge and sprinkle coarse sparkling sugar. Bake the galette for 40–45 minutes to brown the pastry and cook the apples.  

Step 7

While warm, drizzle or brush another tsp or two of honey over the galette for a glossy top. Serve warm with vanilla ice cream.
