Nutty Spiced Snowdrop Cookies Recipe

Nuts and Spiced Snowdrop Cookies taste great with butter, nuts, and spices. A favourite for the holidays!  

INGREDIENTS

FOR THE COOKIES: – 2 cups (240g) all-purpose flour – 1 teaspoon ground cinnamon – 1/2 teaspoon salt – 1 cup (226g) unsalted butter, softened – 3/4 cup (82g) confectioners’ sugar, sifted – 1/4 cup (50g) firmly packed light or dark brown sugar – 1/2 teaspoon almond extract – 1 cup (120g) chopped pecans (or other nuts) FOR THE COATING: – 1 cup (110g) confectioners’ sugar – 1 & 1/2 teaspoons ground cinnamon – 1/2 teaspoon ground nutmeg – 1/2 teaspoon ground ginger – 1/4 teaspoon ground cardamom – 1/4 teaspoon allspice

Making cookies: Mix flour, cinnamon, and salt. Set aside.  

Step 1 

INSTRUCTIONS

Beat butter, confectioners' sugar, brown sugar, and almond extract until frothy with a medium-speed electric mixer.  

Step 2

Lower the mixer speed. Gradually add flour and blend well. Mix in nuts. Cover and chill dough for 30 minutes or overnight.

Step 3

Preheat oven to 350°F. Cover baking sheets with parchment or silicone. Roll tablespoonfuls of dough into balls. Place them 2 inches apart on prepared pans.  

Step 4

Bake cookies for 12–15 minutes until gently golden. Cookies cool on pans on wire racks for 5 minutes.  

Step 5

TO COAT AND FINISH COOKIES: Mix confectioners' sugar, cinnamon, nutmeg, ginger, cardamom, and allspice in a shallow bowl.  

Step 6

Roll each half cooled cookie in coating. Roll cookies in coating again after cooling if needed.
