Oaty Berry Breakfast Bake Recipe
– 2 cups Oats, Rolled or Jumbo - about 180g– 2 cups Coconut/almond/oat/organic milk, About 500ml– 1 tspn ground cinnamon– 2 tbspn chia seeds, Or flaxseed– 3 tbspn Peanut butter, Or any nut butter– 2 tbspn Maple syrup, Or honey/rice syrup/dark brown sugar– 1 cup mixed berries, Fresh or frozen– 1/2 cup Water, About 120ml
Preheat oven to 190C (175C fan, 375ºF). Prepare a square or loaf tin with parchment paper or oil or butter.
Step 1
Mix the oats, milk, cinnamon, 1 spoonful of syrup or sugar, chia seeds, and 2 tablespoons of peanut butter in a bowl.
Step 2
Place the fruit in a saucepan with water and leftover sugar or syrup. Place over low heat and boil for 5–8 minutes until mashable.
Step 3
Fresh fruit may be mashed without heating. Blend or mash the fruit using a potato masher.
Mix fruit into porridge.
Step 4
Place the ingredients in your tin and bake for 20 minutes. Remove it, drizzle with the remaining peanut butter, and add a little dark brown sugar for crunch.
Step 5
Bake another 10–15 minutes until firm. Avoid burning the top! Serve after cooling from the oven. Slicing and enjoying! Our favorite is with a huge dollop of natural yoghurt!
