Peach Cobbler with Cinnamon Swirl Biscuits is summer's best dessert, with juicy peaches and delicate handmade biscuits that taste like cinnamon buns.

PEACH FILLING – 2/3 cup packed brown sugar – 2 Tbsp cornstarch, if you like a really thick, pie filling consistency, use 4 Tbsp – 2/3 cup water – 10 medium peaches, peeled and sliced – lemon juice BISCUITS – 1 cup all-purpose flour – 1 Tbsp brown sugar – 1 1/2 tsp baking powder – 1/8 tsp a pinch baking soda – 1/4 tsp salt – 1/4 cup butter, cut in small chunk – 1/3 cup milk – 1 Tbsp butter, melted, for brushing SUGAR WALNUT SWIRL – 1/2 cup finely chopped walnut – 3 heaped Tbsp brown sugar – 1/2 tsp cinnamon GLAZE – 1 1/3 cups powdered sugar – milk (or half and half, or cream) to thin the glaze – 1/4 tsp almond or vanilla extract, optional

INGREDIENTS

Heat the oven to 375F. Slice the peaches into a large dish after peeling them over the sink. Mix with fresh lemon juice to avoid browning.

Mix brown sugar and cornstarch in a big skillet, then add water and cook virtually constantly. Put peaches and juices in and boil. The mixture should thicken. Set aside.

Step 2

Mix flour, sugar, salt, baking powder, and soda in a bowl. Work the butter into the flour until it resembles coarse crumbs. Like me, you can pulse in a food processor.

Step 3

Create a well in the mixture and add milk. Just mix the two with a fork until dough forms. On a floured surface, gently knead the dough 10–12 times.

Step 4

Roll or pat dough into a 12x6 inch rectangle. Mix filling in a small bowl. Coat the dough with melted butter and sprinkle with nuts and sugar. Roll dough from the short end.

Step 5

Cut the log into 6 1-inch slices with a sharp knife. Rewarm cooled peaches in a 10-inch cast iron skillet. Cover heated peaches with biscuits. 

Step 6

Bake until the mixture bubbles and the biscuits are brown, about 25 minutes. Use a baking sheet under the skillet to catch fluids. 

Step 7

While the cobbler bakes, mix the glaze until it drips thickly. Cool the cobbler before glazing and serving. Use quantity of glaze as desired.
